421 W. Main Street in Fredericksburg.
This next chapter will bring you more room to gather, sip, celebrate, and stay awhile—with expanded dining, afternoon tea, brunch, private events, curated retail, and even more of the whimsical Blue Thistle experiences you love.

Blue Thistle was born from a lifelong love of craft, care, and nourishment.

"At its heart, Blue Thistle is an homage to my father, a Vietnam Army veteran and apothecary pharmacist, whose belief in precision, integrity, and care shaped the way I approach my work. Watching him taught me that nourishment isn’t just about what we consume, but how it’s made and why. Blue Thistle carries his legacy forward—where culinary craft meets herbal tradition, and every offering is grounded in memory, respect, and quiet intention."
